A scrambled egg without egg, it's possible! It's very easy and quick to make, and it's delicious too. Try this scrambled tofu for breakfast or lunch. Eat with bread or a cracker, or mix in a few handfuls of fresh spinach or other leafy greens for lunch. Bake for dinner with cauliflower or broccoli rice and a jar of black beans, a red pepper, and fresh coriander. Easy peasy plant based cooking!

You need this

  • 1 block of tofu
  • 1 onion, chopped
  • 1 tbsp olive oil
  • cup mushrooms, sliced
  • 250 g cherry tomatoes, quartered
  • Handful of fresh flat parsley, finely chopped
  • ½ tsp turmeric powder
  • 1/2 tsp Kala Namak salt (or celery salt or Herbamare )
  • Freshly ground black pepper to taste

That's how you make it!

Remove the tofu from the package and rinse. Crumble the tofu in a large bowl with your hands. Saute the onion in a frying pan over medium heat. Add cherry tomatoes and mushrooms and fry for a while. Add the crumbled tofu and fry for 3 minutes (turn regularly). Add the turmeric and Kala Namak salt and parsley, and stir fry for 1 minute more. Season with extra black pepper.

Additional tip

Finally, mix in a large tablespoon of oat spread from Oatly , the green one with chives for example. Very tasty!
